Kutsinta or brown rice cake is a type of “kakanin” that uses lye water as an ingredient. Kutsinta is somewhat sticky yet chewey (thats what lye water does) at the same time and is best eaten with grated coconut on top.

Sago pudding is a sweet pudding made by boiling sago with either water or milk and adding sugar and sometimes additional flavourings. It is made in many cultures with varying styles, and may be produced in a variety of ways. In Malaysia, sago gula melaka is a sago pudding made by boiling pearl sago in water and serving it with syrup of palm sugar (gula melaka) and coconut milk. In the UK, “sago pudding” is generally made by boiling pearl sago and sugar in milk until the sago pearls become clear, and thickening it with eggs or cornflour. Depending on the proportions used it can range from a runny consistency to fairly thick, and can be similar to tapioca pudding or rice pudding.

Ginataang Langka refers to unripe jackfruit cooked in coconut milk. Although jackfruits are considered fruits, unripe ones have the same attributes as vegetables; this was the reason why jackfruit in this recipe is treated as such. As for the flavor, much of it comes from the salted dried fish (locally known as daing); I also like using shrimp cube to add more taste to this dish.

Mongo Guisado Recipe

Monggo Guisado is a favorite dish accompaniment for a lot of meat and fish dishes. It is usually made with Dahon ng Ampalaya(leaves of bitter melon plant or Amargoso leaves), and you can add pork if you want. During Lent, we do away with pork and make it with shrimp and Tinapa(salted, dried and smoked fish). If you can’t find ampalaya(bitter melon) leaves, a few slices of ampalaya will do. This gives the dish it’s slight bitter taste. For a thick and creamy Mongo Guisado, take half of the boiled mung bean and put in a Blender or Food Processor – or if you have a Hand Blender stick, you can puree directly on the pan. You only need about half of it pureed. Just make sure you blend it slowly and the stove is turned off.
